Snack Ideas 3 of 5

Here are some more Snack Ideas:

Snack Idea #4: Chocolate "bullets"

Cut a few sticks of licorice in to pieces about 2 cm long. Melt about 5 rows of chocolate. Coat the pieces of Licorice with the chocolate. Cool until chocolate is hard.
ENJOY!

Snack Idea #5: Jelly Jewels:

Follow the directions on the jelly packet to make jelly molds (tip: use less water than usual) Cool until set. The jelly should not fall apart when tipped out. Make into jewel shapes. ENJOY!

Snack Ideas - 2 of 5

Hello again! Here are some more great snack ideas:

Snack Idea #3: Ant Sticks:

Cut a stick of celery in to pieces about 10 cm long. Mix about 4 tablespoons of peanut paste with 2 tablespoons of sultanas. Spread in the groove of the celery pieces. Mmmm!

Snack Idea #4: Squirmy Wormys

Mix about 4 tablespoons of peanut paste with 2 tablespoons of sultanas. Put 2 leaves of lettuce on top of each other. Spread about 1 Tablespoon of the mixture onto the leaves. Roll the lettuce up. Wriggle wriggle!

Snack Ideas - 1 of 5

Here are a few snack Ideas. I will get 5 posts of this type up so if you have any ideas, could you please comment on any of these posts.

Snack Idea #1: Apricot logs

Blend up some dried apricots then mold the mixture into log shapes. Roll in dessicated coconut and refrigerate until chewy. Enjoy!

Snack Idea #2: Dried Fruit salad

Cut about a handful each of dried apricots and dates in half. (If the dates have seeds, remove these before continuing). Add a handful of sultanas or raisins and any other dried fruit (eg. dried apple, banana, pineapple, pawpaw etc.). For some variety you could add some nuts, crushed or whole.

Impossible Coconut Pie

I would call this recipe from the "Grass Roots" Magazine (Dec 06-Jan 07) more of a slice but it is still delicious.

SERVES 8

4 eggs
220 g caster sugar
100 g butter, softened
100 g almond slivers
1 cup desiccated Coconut
2 Tablespoons grated lemon rind
2 Tablespoons grated orange rind
1/2 cup lemon juice
1/2 cup orange juice
1 cup coconut milk
1/2 cup plain flour

Preheat Oven to 180 degrees Celsius. Place Ingredients into a food processor and blend until well combined. Pour the mixture into a buttered 28 cm pie tin and bake for 1 hour or until lightly browned. Cool and Refrigerate for 1 hour before serving*. Serve with whipped Cream.

* I found this alright when not completely cool.

All-Raw Cheesecake

This is a delicious Raw food recipe for those who have a sweet tooth. It is adapted from "Nourishing Traditions" by Sally Fallon.

SERVES 12-16

2 cups almonds
1 cup pitted dates
4 cups cream cheese (preferably home made)
4 eggs, separated, at room temperature
1 1/4 cups milk (preferably raw)
2 tablespoons Gelatin
1/2 cup raw honey
1 tablespoon vanilla
pinch sea salt

In a food processor, process dates and almonds until they form a sticky mass. press into buttered 9x13 inch tray to form the crust.
Put egg yolks and milk in a saucepan, beat lightly, sprinkle with gelatin and warm slightly until gelatin is dissolved. In a food processor, combine cream cheese, honey and vanilla and process until smooth. Add yolk mixture and process until smooth. Transfer to a bowl and place in fridge while beating eggs. Beat egg whites with a pinch of salt until stiff, fold into cream cheese mixture and pour into crust. Chill several hours before serving.

Irish Oatmeal

Good for Breakfast in Winter, this Recipe is adapted from Nourishing Traditions by Sally Fallon.

SERVES 4-6
1 cup whole oats
2 cups warm water
4 tablespoons yoghurt or buttermilk
1 teaspoon sea salt
1 1/2 cups water

Place oats on baking tray and bake a t 350 degrees until they turn light brown. Grind Oats in Grinder. (The Resultant meal should be part flour part small bits). Soak from 7 to 24 hours in a warm place in 2 cups warm water plus Yoghurt or buttermilk. The fine flour particles will rise to the top and may be lifted of carefully with a spoon. Bring Additional 1 1/2 and sea salt to a boil, add soaked oatmeal and cook over a very low heat, stirring frequently , for a bout 10 minutes.

Mushroom Soup

This is a delicious Recipe for a main meal and it is very simple.

Ingredients:

2 Medium Onions, peeled and chopped

3 tablespoons butter

1 Kilogram fresh mushrooms

4 table spoons butter

4 tablespoons extra virgin olive oil

1 litre chicken stock

1/2 cup dry white wine or sherry

1 piece whole grain bread, broken into pieces

Pinch of nutmeg

Method:

Sauté the onions gently in butter until soft. Meanwhile, wash the Mushrooms and dry well. In a heavy cast-iron skillet, sauté the mushrooms in small batches in a mixture of butter and olive oil. Remove with slotted spoon and drain on paper towels. Add sautéed mushrooms, wine or sherry, bread and chicken stock to onions, bring to a boil and skim. Reduce heat and simmer for about 15 minutes. Puree soup with a hand held blender. Add nutmeg and season to taste. Ladle into heated soup bowls and serve with plain or sour Cream

Basil Pesto

This Recipe goes well with pasta and you can add some tomatoes to make it even better!

Ingredients:

2 cups packed fresh Basil leaves, washed and dried

2-4 cloves Garlic, peeled

1/2 teaspoon sea salt

1/4 cup crispy pine nuts

1/4 cup good quality grated Parmesan cheese

1/4-1/2 cup extra virgin olive oil

Method:

Place basil leaves in food processor. Pulse until well chopped. Add garlic, salt pine nuts and cheese and blend well. Using attachment for adding liquids drop by drop, and with motor running, add olive oil to form a thick paste. Pesto will keep several days, well sealed, in the fridge; or it may be frozen

Raw food "Colourful Cabbage" salad

FINALLY! RAW FOOD! This one is a cabbage salad from "Rejuvenate your Life" by Serene Allison.

COLOURFUL CABBAGE SALAD
SERVES A LOT

INGREDIENTS
1 Finely chopped medium red cabbage
1 Finely chopped medium green cabbage
2 or 3 apples cubed
Approx. 1/2 cup raw apple cider vinegar
Approx. 1/2 cup extra virgin olive oil
Fresh black pepper
1 TBS. sea salt
2-3 TBS. poppy seeds
1/4 cup pure maple syrup

Chop Cabbage by hand. Throw in everything else. Mix around a few times Taste and adjust flavours. It should have a sweet edge with a vinegary and zesty tang.

Chicken-in-a-hurry

Hi again! Here I have yet another from "Simply to good to be true"! This one is called chicken in a hurry.

CHICKEN-IN-A-HURRY
SERVES 4
INGREDIENTS
1 BBQ Chicken
1 pkt cream of chicken Soup
1 1/2 cups milk
1/2 cup stock water (optional)
1 x 500g pkt mixed frozen vegies
1 diced onion
1/2 teaspoon basil

Remove chicken from bones. In a large saucepan cover vegies and onion with boiling water, cook for 5 minutes.drain, set aside - keep 1/2 a cup of the stock water(may be needed later). In the same saucepan combine milk, soup mix and basil, bring to boil. Add vegies and chicken, mix together. Cook 3 minutes, if mixture is to thick add left over stock water till the right consistency is achieved. Serve with cooked rice, pasta or potatoes.

Hi again! I've got another recipe from "Simply to good to be true" by Annette Sym. By the way, can you please write a comment after you have tried any of the recipes to tell other veiwers how it tasted. If you feel like it you could even give it a rating (eg. *** = 3 stars)!

TUNA MORNAY
SERVES 4
INGREDIENTS
2 x 225g can tuna drained
2 cups milk
2 Pkts single serve mushroom soup
2 teaspoons margarine/softened butter
1 tablespoon flour
1 small onion diced
1 teaspoon chicken stock powder
1/2 teaspoon tarragon (optional)


Microvawe onion in a little water on high for 5 minutes. Melt Margarine in medium saucepan, add flour, mix well. Gradualy beat in milk(use whisk to avoid lumps) until white sauce is made. Add soup, stock and mix well. Stir in tuna, onion and tarragon. Bring to Boil, Simmer for 5 minutes. Serve with boiled rice or pasta.

Minestrone Soup

Hi there! Heres a recipie theat I found in a cookbook called "Simply too good to be true" by Annette Sym

MINISTRONE SOUP
SERVES 10
Ingredients
2 litres (8 cups) water
1 cup each of sliced celery, small Brocolli florets, cubed carrot, cubed zucchini an diced potato
1 onion chopped
1 x 410g can chopped tomato
1 x 440g can drained washed Kidney beans
1/2 cup (60g) raw small pasta noodles
1/2 cup tomato paste
4 teaspoons beef stock powder
1 teaspoon crushed garlic
1 teaspoon basil
1 teaspoon oregano
1/2 cup chopped parsley
salt and pepper to taste

Place all ingredients into a boiler or large saucepan. Bring to boil. Simmer 20-25 minutes or until vegtables are tender. To avoid pasta sticking, stir occasionally.
