Irish Oatmeal

Good for Breakfast in Winter, this Recipe is adapted from Nourishing Traditions by Sally Fallon.

SERVES 4-6
1 cup whole oats
2 cups warm water
4 tablespoons yoghurt or buttermilk
1 teaspoon sea salt
1 1/2 cups water

Place oats on baking tray and bake a t 350 degrees until they turn light brown. Grind Oats in Grinder. (The Resultant meal should be part flour part small bits). Soak from 7 to 24 hours in a warm place in 2 cups warm water plus Yoghurt or buttermilk. The fine flour particles will rise to the top and may be lifted of carefully with a spoon. Bring Additional 1 1/2 and sea salt to a boil, add soaked oatmeal and cook over a very low heat, stirring frequently , for a bout 10 minutes.
